1. Tesi: Dear Chef Yammine, you are the Executive Chef of the Diplomatic Club Qatar. Please tell me more about your background and the philosophy of the club.

Chef Joseph Yammine: Philopsphy about the Club – The Diplomatic Club was originally built as a palace and then converted to a club for Diplomats and Politicians. At a later stage, the club then opened its doors to the public. The club is located on a sea side and is decorated with Arabian architecture. The aim of the club is to delight guests with its unmatched services from various services ranging from Spa, Food and Beverage, Recreation etc.

2. Tesi: Everybody knows Qatar but many people have not been there so far. Which culinary highlights and restaurants can't be missed if a visitor comes to Qatar for the first time?

Chef Joseph Yammine: Since Qatar is a culturally rich country, the cuisine reflected in this nation is highly derived from culture and then art. My personal recommendations would be IDAM By Alain Ducasse, Nobu at Four seasons, and Gordon Ramsay at St. Regis. For anyone willing to try traditional Qatari cuisine in a trendy style, must drop by Nassayem Qatar at The Diplomatic Club.

3. Tesi: Some chefs discover their love for food and their gift for preparing outstanding dishes quite late, while for others it is clear in their childhood years that they will become a chef. When did you discover your ability to prepare food that is far beyond the norm?

Chef Joseph Yammine: I fortunately discovered my love for cooking at an adolescent age. After working with renowned chefs who would love to cook beyond their limits, I got hooked on that drive and that's how the love for cooking developed. This love was then transformed as my career.

4. Tesi: What is your favourite dish with less than five ingredients and why?

Chef Joseph Yammine: I adore Smoked Salmon on a crispy baguette with a drizzle of olive oil and cracked black pepper on top. The blend of flavours in this dish are what I like.

5. Tesi: What does good food mean to you?

Chef Joseph Yammine: Good food is a pleasure and a gift from God. It is indeed a gift to enjoy delicacies from all over the world.

Biography Chef Joseph Yammine:

Born in Beit Chabeb in October 1970, married with 2 kids. As a teenager studied Culinary Arts at "Ecole Hoteliere" and continued study for Hotel Management at the "Technical Hotel Institute", Beirut and graduated in 1994.

Start working at "Sofil Catering" and then move to Moevenpick Hotel and Resort, Beirut as Banquet Chef and promoted to Executive Sous Chef meanwhile teaching" Culinary Arts" in Institute de Gestion et Enterprises (IGE) faculty, part of USJ.

Took the position of Executive Chef at The Diplomatic Club, Doha, Qatar in 2008 till present, work with a group of chefs to create Qatar Culinary Professionals (a part of WACS) a non-profit organization aiming to enhance the Chef community.
