1,001 eggs for breakfast

Once northern Canadian recipe ... I've not seen these in a restaurant but certainly a unique delicacy hailing from the wilds of northern Canada.

Take some fresh Yukon white fish or Grayling eggs and fry in a bit of butter. Salt and pepper to taste. Fry (we always did this over an open campfire - of course the crisp air and fresh water contributing to the whole experience).


Caution: when frying, do keep a tight lid on the pan - these eggs do pop and literally sound like popping corn once they get going! Not to mention, grayling eggs are tiny so 1,001 eggs is probably a small side breakfast.
