LAMB MIXTURE:

  • 16 oz. Lamb, minced
  • 1-Shallot, minced
  • 6-Mint leaves, finely minced
  • 1 Tbsp. Parsley, minced
  • 1 Tbsp. Butter, rendered
  • 1 Tbsp. Aleppo Pepper
  • Salt

CONDIMENTS:

  • Mixture or blend of olives, minced
  • Za'atar seasoning
  • Aleppo Pepper seasoning
  • Fresh Figs, sliced
  • Whole Capers
  • Nigella Seeds
  • Quail Egg
  • Rendered, brown butter
  • Greek Yogurt
  • Arak Liquor
  • Sprig of Fresh Herb

Mix a tablespoon of Arak into a cup of Greek Yogurt. Add a tablespoon of rendered butter, and salt. Stir, keep cold; set aside.

Mix lamb with seasonings above. Keep cold.

Assembly:

Place Labna-Arak Sauce on plate. Make a swirl. Place quail egg yolk on top. Season yolk with salt, nigella seeds.

Place seasoned meat on plate. Top with olives, figs, browned butter and herb, such as dill, mint, parsley.

Set Caper Berry and add spices artistically on plate.

Drizzle with browned butter all around meat.

Gabriele Andreoni

Gabriele Andreoni was born in Fiesole (Florence) in April 1981.

After finising high school he began an agricoltural university, and to pay for his studies he worked as a waiter, but what interested him the most is what happens behind the restaurant passe. Angelo, the chef, asked him to join the kitchen brigade.

From that day he would not forget that man with the white beard and white chef's hat that showed him that the kitchen was his true path.

A professional cooking course took him first as a stagier, and then as a line cook at "Oliviero", one of the most famous restaurants in Florence, but he wanted to know more, so he decided to attend ALMA,

Gualtiero Marchesi's culinary academy.

Here the doors to great restaurants opened:
• Giancarlo Perbellini, master of technique and humility.
• Mauro Colagreco, fish, vegetables, and respect.
• Heinz beck, German rigor, Roman conviviality and taste.
• Fabio Barbaglini, unchecked passion for meat.

The stages with Paolo Lopriore e Andrea Berton revealed innovative techniques.

In 2012 Gabriele decided that it was the moment to return to Tuscany and get in touch with his roots.

Some experience, such as sous-chef in Relais-Chateaux Villa Cora in Florence, allowed him to refamiliarize himself with products and producers in the Tuscan region.

From 2017 he is the Chef at Gurdulù restaurant, in one of the most popular areas of Florence; Santo Spirito. Here he offers a creative and technical menù, that is fun, tasty and thoughtful.
