Working with all the great European chefs in the 80´s and 90´s, travelling and working in 26 countries of the world, gave me the capacity to select honest from good food.
And there is a huge difference between "good" food and "honest" food. Good food, depends on the way of preparation, taste and optical impression. Honest food reflects the base of food as well. The base of food is laid on the fields, where small, NON industrial farmers grow their products honestly, as they did for hundreds of years. I absolutely prefer honest food !
In my hotel, we only and rigorously use local products, our chefs collect daily fresh products directly from the farmers and prepare respectful dishes for our guests from it.
I am 51 years young and work since more than 35 years in international tourism industry. Working with the big chefs in the 80´s, travelling and working in 26 countries of the world, gave me the capacity to select honest from good food.
Born half German and half French, I call myself a world citizen...and I love it. Here in Austria, I hopefully found my home :-) who knows, what tomorrow comes...
